Earlier (in this post) I mentioned that I was “craving” summer, so I decided to whip up some comfort food that I used to be able to always find in the fridge during my summers at home. Today I made ceviche!
I prepared about 2 servings. Enough for dinner tonight and lunch tomorrow.
1/4 Small red onion
1 Medium sized seedless cucumber
2 Roma tomatoes
10 boiled shrimp
The juice of 4 Small seedless limes or 2 Large limes
Salt and Pepper to taste
Cut and dice the veggies and shrimp and toss ingredients into a bowl containing the lime juice. Add salt and pepper then refrigerate to marinade all of the flavors. Easy as that! My mother adds crab meat and cilantro sometimes and it is phenomenal. Get creative and don’t be afraid to make this recipe your own. Happy Sunday!
